Squirrel cooking

Once you've cleaned and gutted your tree rats, how do you prep them for cooking? Maw maw always soaked in water for a couple hours then cooked whole in a pressure cooker. What else is out there?

I put a dry rub on them and grill them.

cut up, four legs and a back and a saddle(back at ribs)then fry like chicken.

Maw Maw's pressure cooker is great. It gets them tender. Mine would cook them like that then add some dumplins.
I also like to boil them and then make a gumbo or stew with a little beef stock and vegetable.

Cut up, season, brown in black pot with a little oil to make a gravy with the Cajun Trinity. (Onions Garlic, Bell Pepper)

My grandmother would come out and seperate them into two piles, young ones I didn't have to clean the heads, old ones I did. Fried squirrel and biscuits for breakfast.

Add a little water..simmer for about an hour. Tender as can be.

Cook in a gravy.
Trick is to brown the ever living hell out of them, you almost want them to stick. Take them out and add onions, bell peppers, with water cook down veggies slowly. Add squirrels and cook slowly for a few hours.

OG is right on the money for how we do it. Havent done it in years, but looking forward to the boys getting old enough to hunt and doing it again.
