Heres some advice. Went to Don's Seafood Hut in Laffy a couple of weeks ago. A bowl of seafood gumbo was $14.95. The cup as an app was $8.95. Either is highway robbery.

So, my advice is not to eat gumbo at Don's Seafood Hut.

Its a Gumbo damn it..

Make it the way you want, as long as you like it..

The world would be a boring place if everybodys Gumbo tasted the same.

It's smothered..not sliced up and chunky. It has flavor and makes the gumbo really thick. I do not like the sliced okra in a gumbo.

ETA: here is a pot of smothered okra. Add a quart of that to a gumbo.

I was at camp and started to make smothered okra and tomatoes with shrimp and sausage and someone changed menu to gumbo. So I started roux in another pot and dumped in the okra/rotel/sausage mixture. I was pretty darn good.

Read my thread on oven roux and try that next time. I think you'll like your gumbo even more.
