Here's the ground rules:

1. Must use chicken as main meat...war chickens and all

2. Need to feed about 100 people

3. Don't want to do jambalaya, pastalaya, or gumbo

Suggestions?

War Eagle Taco's.
BBQ chicken thighs the day before so all you have to do game day is prepare the taco's. Depending on the set up you can have everyone prepare their own...
Good shite too!

Just put chicken, velveeta, and cans of cream of mushroom soup in a big cooler and allow your guests to stomp it into unrecognizable mush.

It'll represent the action on the field.

When your guests complain of hunger, say, "We're all hungry for some kind of real competition."

Then nod at each other in satisfaction.

Pulled chicken.

Check out Paul Prudhomme's chicken etouffee. It's tasty, but it might be like the things you're trying to avoid.

Chicken spaghetti.

Buy a frick-ton of boneless skinless thighs, stuff em with a variety of things (boudin, mushrooms and Swiss, jap and cream cheese) wrap em in bacon, season the shite out of em and grill em up. Grill sOme veggies and pineapple and make a few dips.

I know they have been telling me about metrics since like 4th grade, but I am not clear...is frick-ton more or less than shite-ton.

I'm leaning toward this or chicken creole.

Me too, but I'm doing gator sauce piquant in a few weeks for the UF game so I think chicken creole may be the ticket for this game.

Thanks for the ideas, folks!

imo going with a one pot dish would be easiest for 100 people. Chicken creole sounds like a good idea
