Think I'll make a version with what I have laying around. Two pounds of white navy pea beans I soaked last night, the rest of a roasted leg of lamb cubed, garlic sausage, five baked chicken legs, garlic, white wine, chicken stock, flat leaf parsley, onions, bit of tomato paste. Low on the stove then covered and low in the oven. Might put some panko breadcrumbs over the top at the end and brown. Oh and Wrights bacon. And a can of tomatos. Also have a bit of bulk pork sausage I might add. Kind of a sweep the kitchen version.

True Cassoulet has no tomatoes, its kind of like gumbo in that matter.

Careful with the breadcrumbs, almost lost a whole cassoulet due to inattention to oven. Saved it just in time.

Apparently your reading skills are impaired as I typed where I was making a version of Cassoulet with what I had in the house which did include carrots and a lot more garlic as well as tomatos.

And since I have a Julia Child and a Thomas Keller recipe that both contain tomatos as well as many more I've eaten in restaurants that have tomatos I will go with those before a Rat.

Plus I'm not feeding you so STFU and heat your ham and cheese Hot Pockets before your power goes out.

Well since you two must be on loan from The Weather Channel, I'll refer you to Mastering the Art of French Cooking, Julia Child, Louisette Bertholle and Simone Beck; chapter 7 Meat; pages 399-404; French Baked Beans (cassoulet) in which 6 tablespoons tomato purée, paste or 4 large peeled, seeded tomatos are added.

Conspicuously absent are carrots.

I've got hurricane time on my hands as well Einsteins.

So because some BOOK says to put tomatoes in it that makes it right? I don't care how many recipe books you come up with, if it's got tomato in it, it's not cassoulet!

No one likes tomatoes in cassoulet and no true cajun would put that crap in there.

You'd be laughed off my tailgate if you showed up with that.

It's a French dish that has tomatos in it douchebag. This isn't a pot of Cajun white beans. And apparently many do like it as I've always had it wherever I've eaten it including Ad Hoc about a month ago.

Some book. Well, I wouldn't consider it just some book but your lack of intelligence tells me books aren't your cup of tea. I imagine you just go pull the jug from Paw when the vittles are ready.

I'll try to avoid being laughed at as I normally try to avoid poor white trash anyway.

If you want to come into a thread and tell me to get that bullshite out of here I suggest you do your own homework first. If you have been to France and eaten this dish ten times, eight would have tomatos in it. I'm not talking back Brusly douchebag.

Why does my French ex-wifes grandmothers recipe book written by hand not have tomato products in her recipe? It is very old, I would guess she got it from her mother in fact.

Well above I stated you had reading comprehension skills. And I do believe a link you provided me with tomatos in JAMBALAYA just confirmed my suspicions.

It's better to be quiet and let people just think you are an idiot rather than open your mouth and confirm it.

If you look at that jambalaya thread, you'll see that I listed over 30 cookbooks that had tomatoes in their jambalaya. You're using my argument from that thread.

Whiny man, how many French people have you cooked Cassoulet for in your life? I have done it for several hundred so don't pull out a cookbook on my arse. I don't care who was the author.

I have had cassoulet at homes in France. I have had cassoulet from my cajun grandmother in Pointe Coupee. I have had Cassoulet at restaurants in NYC and Paris such as La Cote Basque, La Coupole, and Les Deaux Magots. I have never had any tomato in cassoulet(excepting NYC's Chez Josephine) which specializes in a seafood cassoulet with black beans, lobster, shrimp and stewed tomatoes with an almost bouillabaisse-like stock. If there has been tomato in any classic representation, it has been a slight puree which does not color the creaminess of the white bean sauce and consistency- and sometimes it has been just a slight layer of puree underneath the breadcrumb layer at the top(also occasional). Tomato is not an integral part of classic cassoulet excepting as a slight nod to an individual chef's preference.
