How long can you keep rendered bacon fat?

Does this grease go bad or rancid in a sealed container? I have some that I've had for a while and it seems to have "separated". I seem to remember hearing of people that keep a can and just keep adding to it. TIA.

In sealed container in the fridge it should be good for a few months I'd imagine.

You end up heating the shite out of it when you use it which kills everything.

That's a good point. I've seen people that don't keep it refrigerated.

I keep it in a small covered crock in the fridge and add to it or take from it ... indefinitely.

my mom would keep it at room temp on the stove for a few days.

Dont most people grease their cast irons with pig fat? At least initially?

Scoop out 1 teaspoon balls...put them in a freezer bag. Freeze them. They will last forever

The stuff is pretty much indestructible. Just keep it in a tightly sealed cannister.

I keep mine stove top in a small vast iron. Cook with it for a few days and its gone.

Maybe two weeks for me. The high sodium levels will likely keep things fresh longer.

HEB's jalapeno bacon renders the best drippings!

With the additional caveat that is needs to be strained well before storage.

In the olden days, they used to preserve food by packing it in pork fat (no refrigeration of course).

Mine stayed in a coffee cup next to the eggs in the fridge. I don't think it ever got empty, so that stuff in the bottom was a good three years old.
