Help needed from all you chefs

So I told my girl I would cook dinner for her this weekend. Normally I would take her out, but for some reason decided to do cook this weekend. What's a fairly easy but good meal I could prepare? Any input would be appreciated

It is summer time and most girls like to eat lightly anyway. So assuming you are neither in the Southern Hemisphere nor dating a wilderbeast, try this.
Get some real tomatoes, not the greyish shite. Slice them, salt and pepper them. Add some sliced mozzarella and a bunch of torn basil. Drizzle on some olive oil and a few drops of vinegar (balsamic, sherry or red wine should do).
Surely you can grill chicken/fish/shrimp to finish this off.

What BO said. Try and get homegrown or heirloom tomatoes. If you can't, you can do the same thing with a variety of the grape tomatoes. Just cut the fresh mozzarella into smaller pieces or get the brand that has the fresh mozzarella "pearls".

BO, your chicken paillard topped with arugala would work as well. That is a great summer time meal.

Sauteed or grilled fish(prerably whole minus the head) recommend rainbow trout if it is avalible, roasted veggies and potatoes.
ETA, it would help to know how good are your chops in a kitchen.

Go to Whole foods and buy a rack of pre cooked Baby Back Ribs and Mac/Cheese. Before she gets to your crib, throw the ribs on the pit - and the mac/cheese in the microwave for a few minutes to warm em up - she'll think you cooked all that shite from scratch. Its important that you make a mess in the kitchen like you slaved all day, and for the final coup de gras, serve some Boones Farm Strawberry Hill. Thank me later!

Thats what I was going to say, Heirloom tomatoes, some good cheese, QUALITY EVOO, fresh basil, lemon zest, salt and fresh ground black pepper.
If she does not like tomatoes, I made a watermelon and basil salad yesterday like above that was money!
Stay away from the heavy dishes right now. Mac n cheese, cream sauces, fried breaded stuff ect. It's sooo hot!
If you have some good grillin skills. I would go with some redfish or lamb chops is you got the $. Again, light flavors on the grill this time of year too, citrus, herbs, a little salt and crushed red pepper ect.
Shell peas, okra and corn are great right now and would make a great side You could get a little creative with the veg or simply boil them and add butter s&p.
I tell all home cooks, just keep it simple and use the best quality ingredients.

Blue Runner Red Bean Special:
1 medium sized can of blue runner creole style red beans
Worcestershire sauce
Guidry Cuts creole seasoning

hot sauce
butter
1 link of sausage
1/2 cup of white rice
sautte a handful of creole cuts in a medium sized pot with butter while you boil water with a pinch of salt in a separate pot. When water is at a rolling boil, add rice. Once onions are starting to brown a little bit, add your link of sausage (sliced) to your pot. Once your sausage and onions are cooked, add your can of blue runner with a a tablespoon or two of Worcestershire sauce and season to taste. When rice is split and soft, drain and serve under red beans.

Excellent choice ! Grill it or sauté in a hot skillet. Make a lemon/butter/white wine sauce to drizzle over the top. Add some fresh cilantro and Bingo !
And the caprese salad mentioned earlier is a great go-with.

Great salads are a great idea, but they have to be accompanied by amazing fish or meat.
