What's your favorite way to cook ponce?

I am heading over to Ga to visit some relatives. I've cooked most of the Cajun foods for them but the BIL says he'd like to try ponce. I usually cook it in a cast iron pot in a gravy. Has anyone smoked it? Which recipe do you think would work best for someone just trying ponce for the first time?
ETA BIL also has a BGE and y'all know how those people are, everything is better on a BGE

coat the black pot with grease at the bottom. brown the ponce hard rolling often and puncturing holes as it swells to avoid busting.
take ponce out and add onions, bell peppers, and garlic.
sauttee this till translucent.
add ponce back to pot and add water. put on med/low until the gravy is reduced.

If you don't smoke it then you are fricking up if you do have access to a BGE.

A ponce makes such a pretty gravy that cooking it any other way than in a rice and gravy seems like such a waste.
Maybe smoke it lightly, THEN make a rice and gravy with it!
