Cooking suggestions? (Lemon fish and Pompano)

Have some Lemon fish slabs and a couple Pompano from the 4th and I have not the slightest idea how to cook any of it. Filet? Grilled? Cook on the bone( ) ? Never ate or had any of this before...hell it was my first time even fishing offshore.

I caught and cooked my first pompano this past week. I was just fishing from the beach with a $24 dollar rod and reel combo I bought at walmart in gulf shores. I filleted and cooked it in a pan with salt, pepper, cayenne, and paprika. It was good stuff. I'm sure there are better recipes, but the fish is good.

take the ling and cut into steaks then season with salt and pepper

Take a stick of butter and put into a microwavable dish. Put one tablespoon of minced garlic with it and about 5-6 of worstershire in it. Melt in microwave. Remove and then add about a cup of orange juice to it and cook it on the stove for about 5 minutes until it starts to boil. Take off. That is your basting sauce.

Throw the steak on the grill and bast each time you flip them. Then pour the sauce over them before you eat.

Grill the Pompano whole like this. It's literally my favorite fish.



Just cajun seasoning and butter, lemon juice when done.

Sandflea.

If I'd had better gear, more time, and known what I was doing, I might have caught a few more.

Also caught ladyfish, hardhead, whiting, and one unknown.

Note taken How about freezing? I probably won't be able to cook anything until next week. Would the standard water in a ziplock bag do or are Lemon and Pompano best cooked fresh?

This right here. My favorite fish and favorite way to cook it (aside from maybe a rare tuna steak).

Best Lemonfish I've ever had was cooked at the dock by a deckhand. All he did was cut into steaks & grill, basting with a mixture of olive oil and brown sugar.

What GCHunter said .. steaks on the grill (lemonfish). Hubby did that a week ago and it was REALLY good. He did the butter thing but not the orange juice although that sounds delicious.
