i like the combination of smoking and grilling, juice

after you let them smoke with the dry rub, slather in bbq sauce and sear on the grill. the carmelized sugars and crispy scrust combined with the smoke flavors makes for a superior rib, IMHO

I'm trying to see how it is without sauce this time. Right now I'm battling temperature. It's holding at 300 but I want 225. And I have only one burner on as low as it can go. Pecan chips and apple chips in the cast iron smoker box.

Sounds delicious, this man obliviously knows what he is talking about.

FBD won't be for a bit. Going to the pool, then for a quick run, then firing up the pit and cracking the FBD.

Alton Brown secret is to fill a pan/pot full of water and use it as a heat sink. Never tried it, but the theory is sound.

After the dry rub/light layer of steen's, I go about 1/8" thick on the top with apple butter and let it smoke. Don't do this for every rack, but it is something that mixes up the norm.

That's true, I do have two racks. I'll try one dry and whip up a sauce/glaze for the other to have two options. I've been reading this board all week; everybody does something different.

I'm up for trying them all. Best thing is you don't have to commit to any one thing and if it taste bad you never have to make it again.

Got my 11.5 mile trail run in this morning. Gonna cut the grass, then have a FBD. Then more at the pool.

FBD was a SweetWater 420 after mowing, before weedeating.

SBD is a Bell's Two Hearted Ale. Done with the yard. About to head to the pool.

Kim, had a decent haul this morning. They were out of the Kentucky breakfast stout but I picked up some ky bourbon barrel ale, green flash wc ipa, Founders double trouble and pale ale, 3 Floyds black sun, among others. I could have spent all day at chuck's in bowling green. I will definitely be stopping on the way home. Their other location had the 3 Floyd's Dreadnaught.

Eta: just found some cent ipa and Dreadnaught while stopping to get directions
