Help explain Mexican food to me.



I know Gaffigan had a bit on it, but I still need help knowing the difference. I've started cooking Mexican a lot and I need help with the names. Is a burrito just a large soft taco? Is an enchilada just a burrito with sauce? Is a tostado just a taco on a flat shell? Do Mexicans eat that horrible rice and refried beans with every meal? TIA.

None of what you described is Mexican food. That's all TexMex or American food.

Mexican food as it exists in Mexico is very difficult to find in the United States.

90% of so-called Mexican cuisine served in the States is Tex-Mex which in my mind is nothing more than a euphemism for bastardized Mexican cuisine. Calling Tex-Mex true Mexican cuisine is like calling Wendy's Spicy Chicken sandwich an authentic cajun/creole dish.

I've had the occasion to visit several areas of Mexico from the desert NW to the tropical SE. The Mexican culinary choices vary greatly from the arid mountains of Sonora to the tropics of Campeche. Mex-Mex is far superior to Tex-Mex...

Some of my favs are Huaraches in the North and Puerco Pibil in the South.

All three are traditional Mexican food. We just don't eat them/fill them like Mexicans do.

actually a burrito was developed in the US. when "Taco Bell" first opened in Mexico City decades ago they had have posters explaining what a burrito was. My father had a photo of one but i dont know where it is.

Burrito=flour tortilla
Enchilada=corn tortilla

I expect lots of turned up noses toward tex-mex in this thread. Fact is its much more acceptable to the American palate than most Mexican food.

I love tex mex food, but it ain't authentic Mexican, which is very good too, and much more diverse

Growing up we only really had pinto beans with meals. Rice was something that was done for big meals.

The most typical side dishes my mom would make when I was a kid was mexican squash or fideo.
