Specialty drink for a party

I'm having a going away party in two weeks and am looking for ideas for a specialty mixed drink to serve. The party is starting at 3:00 and will be poolside, so I'd like something fruity and refreshing. Any ideas?

Sounds refreshing although I'd substitute something for the ever clear because those nights don't usually end well

Depends on ones' point of view. Ever clear and going away parties are very, very compatible.

I guess you're right. It would make the karaoke portion of the night THAT much more fun for everyone!

it's called a Baker Breeze
Sprite
Ginger Ale
Bacardi Coconut Rum
Pineapple juice
equal parts Sprite-Pineapple-Ginger ale
then the barcardi is up to you!
It's a drink we created a few years back, and trust me, it's a crowd pleaser!!!!

I cannot remember the recipe, so I will tell you to call information for the Virgin Islands, St Croix, ask for the Rainbow Beach Club. When you call them ask for the recipe for a Calypso Daquari. Three will kick your arse.

Cucumber roll-ups:
2 cucumbers
6 ounces crumbled feta
3 tablespoons Greek yogurt
2 1/2 - 3 1/2 tablespoons finely diced sundried tomatoes or red bell pepper
8 - 12 pitted kalamata olives, roughly chopped
1 tablespoon roughly chopped dill or oregano
2 teaspoons lemon juice
pinch of pepper, or to taste
Slice cucumbers longways with a veggie slicer.
Mix everything, and spread a thin layer on each slice. Roll up like a sushi roll and stick a toothpick in the middle to hold together... DELISH!

Peach Sangrias are a hit around my place for this kind of event.
1.5 liters of moscato
1 bottle of peach schnapps
1 cup of rum
1 can of peach nectar
2 cans of Sprite/club soda
Frozen peach slices
This makes 1 gallon. I'm not typically a fruity drink guy, but this stuff is good, especially when it's hot outside and you're hanging by the pool.
