I have one from a couple different variations. Kinda found what my wife and i really love. Pretty close to what Cantina Laredo serves......
A friend caught some yellowtail and dropped off a few chunks..... Makes a fine ceviche.

So that was made with tuna? I might try to make a batch for tomorrow. A recipe I was reading said to marinate the fish overnight and then add the other stuff the next day. Is that how you did it or did you mix everything at once?

As does flounder.
I wonder if speckled trout or redfish would be suitable to use in ceviche.
Has anyone here tried that?

Marinate fish and shrimp (if u want both) overnight.
Chop veggies and mix the next day. This one was fresh yellowtail and no shrimp. We use Shrimp, Sea Bass, Mahi, Tilapia, etc.
My ingredients: HOMEGROWN Tomato (that and the fresh yellowtail spurned wifes ceviche request), Red Onion, Red Bell Pepper, Jalapenos, Cilantro, Capers, Green Onion, Kosher Salt, Chohula, Lime Juice, Mexican Oregano
Im sure someone will comment on the tilapia.... But it works fine.

Well you inspired me to make a batch. Used mahi from Calandro’s, your recipe, minus the fish is very similar to my salsa recipe. It came out very good…

I will use a piece of Salmon for ceviche. The acids from the citrus ingredients get rid of the "fishy" taste of salmon. I just wish that St Louis was not so damned far away as my fish monger places are not availible to visit every Saturday morning.
