I'm with you on the dark brown gumbo. I like a really dark roux, but the last 2 times I did it, the roux would not dissolve properly in the stock leaving clumps of roux. That really pissed me off
so I had to do something differently this time, so I went lighter. I don't know if it has anything to do with my problem, but this time it all came together right.
