I really can't help you with BBQ, but there is a general store in Johnson City that has great jerkey, and Real Ale Brewing is in Blanco. There is a brewpub in Fredericksburg that is pretty good too.

Can't believe no one has mentioned The Salt Lick between Dripping Springs and San Marco. Don't miss this place. BYOB though.
