Gumbo - Okra or Not?

Leaving for Memphis this morning for the Porta-Leath Crawfish Festival and Gumbo Cookoff. This is my second year and will be cooking for the judges this year by adding okra to my gumbo. I have never used okra in all of my years of cooking gumbo. I called on a few people (elderly) to find out best way to add okra. It seems to be of popular opinion to saute it in black iron skillet and adding it about 15 minutes prior to serving.

Any one care to offer advise?

I like it. Cook it in your roux along with your trinity. You don't want a whole shite load of okra, but some is good imo.

I sometimes add Okra to a seafood gumbo.

I always saute a few minutes before adding to take the slime off the okras. Not sure I would use cast iron though, cast iron can have a reaction with the okra causing it to turn black. But if you only saute for a few minutes you should be OK, but why take the chance.

Agree to add it to the gumbo near the end to keep it from cooking down to nothing.

What Balls said. I put okra in every gumbo I make. I usually fine chop it so I get the flavor and any haters can't see it.

I'm the lazy cook. I usually just get frozen chopped okra and toss it in the pot 15-20 minutes before serving.

I do not like okra in anything, much less gumbo.

I prefer cajun style gumbo and add file at the table.

If you add filet that is okay as well. It has to have Okra or filet or it's just another soup!

Only if you're making okra gumbo. Otherwise, if you're doing chicken and sausage or seafood, you keep that nasty shite far away from the pot.

Three types of gumbo, three different main ingredients. Do not cross the streams.

I don't care for okra in mine, especially chicken & sausage gumbo.

I can tolerate it in seafood gumbo, but I prefer that it not have okra.

If there's no okra, it's not gumbo. Gumbo is a West African word for okra.

Gumbo does mean okra but not everyone uses it. Personally, I dont care for okra in my gumbo. Definitely not in my chicken, sausage and tasso gumbo. I can tolerate it in a seafood gumbo as long as half the gumbo isnt okra. Too much can overpower it imo. Okra gives the gumbo a different flavor.

And it's not soup if you got a roux in it.
