What to grill tomorrow

Having a few people over and will fire up the grill. Anyone have any ideas? Thinking of chicken, but open to new ideas.

Ribs, if prepared right, are always a crowd pleaser.

And if the grill is lit around the Wales house, there is some sausage on it.

Stuff a pork tenderloin with cream cheese and jalapeño then wrap with bacon.

Sausage, boudin, armadillo eggs

this sounds damn good. definitly will be adding sausage to the list, never grill without it

It's phenomenal.. I usually buy it premade from chops in Broussard.

And I agree, lighting the grill without sausage and/or boudin is a sin.

think i'm firing up the smoker this afternoon. probably butterfly a whole chicken, dry rub, and then smoke it on the WSM.

haven't fired up the smoker in a while...too long.

I don't have a grill (yet), but would that work in an oven? I would suppose so.

Yep. Cook covered for 50 minutes at tree fiddy, then uncover for 10 minutes.

Really does sound good.

Question: How do you go about stuffing the tenderloin?

ETA: saw the later post about getting it premade. I am told Cllandro's on Perkins also does this.
