What is the best way to store live in-shell oysters in an ice chest? I need to keep them alive for about 39 hours or so. Do I keep the lid cracked open to give them air? Do I put a little ice on the bottom or on the top of them? Do I cover them with a damp towel? Do I leave the ice chest drain open so that no standing water accumulates inside?

Gonna try my hand at a Low Country oyster roast on Saturday.

Thanks in advance!

Just keep them cold and don't submerge them to keep them fresh. Put ice in the bottom and the sack on top with the drain pulled.

Yes.

That might be tough even if you do everything right. Good luck. Keep them very damp, very cool, and with a little air and you might be okay.

restaurants keep them longer than that.

Keep them very very cold.

They and crawfish can survive for a few days in hibernation mode at about 34-38*

Plenty of ice in the bottom of your chest and keep the oysters out of the water(melt) and you can carry them 4 to 5 days easy.

Want to thank everyone for the advice. The oysters did well. Out of 3 sacks, only had about 3 or 4 dead ones. Thus far no one has explosive diarrhea or projectile vomiting! Life is good!
