Organic? blah blah blah

but Grassfed? grassfed = less fat, leaner (read tougher) meat.

If you are happy with the deal and the meat that's all that matters, but don't let somebody talk you into thinking that grass fed>grain fed.

No experience here but I used to pay 300 a half from a coworker that was free range cattle that ate apples, grass, oats, and molasses

It is a way to tack on about .20 a pound. Hard to get a grass fed the same marbling that you get with grain fed. There are key words to look for when buying like certified. You can market a 56% angus and 44% longhorn as an angus but they have to be over 80% angus to be certified.

This is what they said to expect out of a quarter cow. They said a half cow I could customize it.

My father and I have sent a calf of our own to the butcher twice and by the time you feed it, pay for the butcher, plus give up what you could have sold it for at auction, you spend way more than what you could buy it for at the grocery store. Also, you end up with a lot less steaks than you wanted and more hamburger and roast than you can eat before it freezer burns. Mass production can make things cheaper than you can 90% of the time and beef is no exception. Don't do it.
