I am cooking for a larger crowd than usual this year, and carrying a $20 turkey voucher from work (for one bird). What is the largest size anyone has ever fried? I typically fry one from 12-15 pounds max, didn't know if frying a ~20# bird would work or not. It damn sure won't fit in my oilless fryer, and we are not much on baked after eating them fried for so many years.

Don't fry anything larger than a 15lb. turkey. You will have to char the skin in order to cook it all the way through. 12lb is ideal, just do 2 12lbers.

I agree. Not only the skin, but the legs will be rock hard before the center is thoroughly cooked.

Or fry a Pork loin to go with it

Thanks guys. Might be why I have never cooked a really big bird before. Gee, do you do a loin like pork chop size, or one of those small tenderloins? I'm always up for trying something new in the fryer.

Still trying to perfect this.

I've only done it a few times..
takie 1/2 pork loin Approx 3-4 lbs.

Inject and fry @ 350 4-5 minute per lb.

Makes for a great bark on the outside, nice and juicy inside.

Awesome. Thanks guys.

I was just getting on here to ask how big a bird I can fry. I have 13 pounder on hold, but wasn't sure if I could/should go bigger.

Can you throw a pork tenderloin in with the turkey?
