After the brine...

Should the turkey be rinsed or not? After reading several websites, seems there is a debate on this question.

What do the Food and Drink authorities say?

Yes....And don't salt it!!!!

Rinse several times in cool water very well and pat dry. Be sure to dry ir very good inside and out since this is key to crisp skin.

Then season as you would any other time. If done properly it will not be salty.

How long can I wait to cook the turkey after I take it out of the brine?

How long do you want to wait? Take it out of the brine, wash it really well, pat dry and return to fridge for probably another day without a problem.

Clean it, dry it, sit on counter for an hour or so to come to room temperature then roast.

rinse very well inside and out a has been said. I then dry it well and leave it in the fridge for 24 hours uncovered so the skin will dry out as I like it crunchy.
