Tonight used some soy sauce and happened to glance at the bottle and saw "Refrigerate after opening" - I was a taken aback as I have always kept bottled soy sauce in my pantry and never refrgerated it. Can soy sauce go bad????

Well, I figured since I have never put it in the fridge and have never gotten sick it must be ok to keep it in the pantry. Just thought it odd the bottle said that and I never noticed and never entered my mind it might need to be refridgerated.

The first time I bought it I noticed it on the bottle, so I always kept it in the fridge

I never put it in the fridge. It also tastes fine. But if it was found discovered in the back of a cupboard after 2 years and I saw "refrigerate after opening," I'd probably toss it.

I'm sure sushi joints don't refrigerate the soy sauce on the table but they probably go through it a lot faster than we do. With that being said, I keep mine with my spices in the cabinet. One reason is my wife doesn't like cold soy sauce and I would kinda have to agree with her for once.

Yes, and I'm into buying the smaller bottles when on sale because once opened, the flavor tends to change after a couple of weeks. I used to think that the larger more cost effective (only pennies really) bottles were the way to go but I didn't care for the taste once I got to the end.

Jabber nailed my sentiments. Every one of my condiments goes in the fridge door....and it's packed!

I notice this too.

And I fight with my wife about this all the time. I hate cold soy sauce and ketchup and prefer not to refrigerate, but wifey's a germaphobe.

It's never made me sick. I'm not sure that it's the type of thing that can spoil. I guess mold spores could grow in it over time, but I think I'd notice that when I use the stuff.

I prefer to live life dangerously.
