The process is known as aluminum foil cooking.
I've done an entire turkey in a campfire using this method when the family and I went camping on thanksgiving.
Aluminium foil is nicknamed "Kitchen in a pocket" to those of us that have been camping for years.
Here is a good starter site for recipes.

We do this whenever we go camping. Chop up some peppers, onions, and carrots. Throw those in the aluminum pouch with a cut of cheap meat and a splash of beer and throw it next to some coals for a while. Comes out pretty nice.
My breakfast usually consist of campfire donuts. Get a camping pot and put it on the coals. Melt some shortening in there and get it good and hot. Take some canned biscuits, poke holes in them, and fry them in the shortening. Top with powdered sugar.

With a piece of steel plate, you can cook some very badass steaks.

Dutch oven?
Best answer. You can eat like a king with only a dutch oven. From breakfast casseroles to peach cobbler, you'd be hard pressed to do better.
We also have used aluminum foil for quick eats. Before you leave home, take some pita pockets and fill them with pepperoni slices and grated cheese. Wrap with foil. When you get to camp and get your fire going, toss your individually wrapped pita pockets on to the fire for a few minutes.
You can do the same with ground meat, onions, bell peppers, cheese, seasoning. Makes a nice hash.

Use a dutch oven with a flanged lid.
You can wrap seasoned meat in foil and put it right on the coals.
I have an old grill grate I set on rocks and I put coals underneath.

Bill.....that pita sandwich is one of my favorite backpacking meals. I use my stove to toast if I can't have a fire.
This is a great site for dutch oven recipes.

Take the grills from your BBQ pit, bricks to build a stand for them. Cast iron pots and pans if you got them. Now, what can you not cook? Unless thier is none of your soul in your food.
