Whole butterflied chicken recipe

I've been given the task of cooking 2 whole butterflied chickens tonight, but I've never cooked a whole chicken before and need some recipes. Any recommendations? The simpler the better, as I also have to shuck and grill 2 sacks of oysters as well.
Could do the old SImon and Garfunkle chicken. Get some fresh parsley, sage, rosemary and thyme (about 2 tbsp each). Mix in with about 1/3 cup olive oil. Brush liberally on both sides of the split chicken. Best to place on a med high heat grill and cook about 45 min., turning occasionally.
