Florence dining recs?

Going in a couple of weeks but have never been there. Any suggestions greatly appreciated.

Buca Mario - straightforward Italian with very good food.
La Sostanza - if you want bistecca Fiorentino, go here. Two seatings a night, most at a community table. Fantastic food, even better experience.
Cafe Nerbone in the Mercato (the covered market) - think of it as a plate lunch type place. Awesome ribolita, sandwiches, tripe, etc. Cheap and very good.
Cantinetta Antinori - the restaurant of the Antinori family (the Mondavis of Italy). Really good food and all the Antinori wines are offered by the glass. The Frescobaldi family has a similar set up which is also very good.
There are others, but I've been to all of these multiple times and had very good experiences.

Buca Mario had the best tiramisu I have ever had.
In addition to some of the others mentioned, Osteria La Congrega had a great atmosphere. It was as if you were in the dining room of an italian family. The service was very friendly, and the food was pretty good.
Don't be afraid to just pop into any place off the street and try it. We did not have a bad meal the entire two weeks we were in Italy.
Just be prepared for a much more relaxed style of service. Compared to our American culture, service seems inattentive, but that is the way it is everywhere. Don't think they are neglecting you, you have to ask for everything.

Il Latina. You will be fed more than you could possibly eat. And the wine flows copiously...
I Tre Pini--in the Tuscan countryside. Try the "Fragolino". Homemade sausage and bruschetta are out of this world.

Be adventurous. Try a steak "Tuscan style". Amazing. Also, wild boar is a big hit on menus as well.
You won't drink the same bottle of wine twice. When you go to a restaurant, they will offer you their house wine or something, and you say,"What kind is this?" and they will point to a corner of the restaurant and say,"Oh, that guy made it."
If you drink beer, drink nothing but Nastro Azzuro. It's pretty damn good.
If you talk real loud, they are more likely to understand what you are saying.
