mozzarella cheese with it? Want something like that but with a little more bite (something you can actually taste). Suggestions? Thanks.

Do a combination. Mozzarella, pepperjack, and sharp cheddar.

Or mozzarella, colby jack, and shredded parmesan. There's all kinds of 'can't-go-wrong' cheese combos.

But I would start with mozzarella for the ooze factor alone.
