10-14 people, easy-to-eat food that isn't overly messy (not just sandwiches or wraps), and not too terribly pricey.

I need some ideas to explore. First idea was jambalaya, but I'm not sure I can pull it off that day.

Did you end up making them? I missed your question a while back. So sorry!

I did. Tweaked the recipe a little bit. Don't remember exactly, but it was a hit. Ive been asked to make them a couple of times since. Need a mini muffin pan next time or make them like a crab cake.

I'm so glad they came out for you and people enjoyed them. I think they're a find and we can thank Mouton for originally sharing the recipe. That one didn't work for me without the egg or more breadcrumbs and I wanted a little more flavor, but I could tell it could be a winner. I want to do them with crawfish tails, also.

I'm glad you figured out your own tweaks! I put the last tweaks I made all together in the recipe thread above. If you have other suggestions, add to it!

I've got some frozen tails left from a boil and I promised my family I'd make them within the month. I'll try to make notes of tweaks. But definitely a solid base recipe after you found the right consistency.

Let me know how those come out. I'm addicted to them. They freeze well already cooked. Just defrost and warm in the oven, gently.

Did you serve a sauce with them?

Crawfish pies sounds so yummy! Any clue where I could get good ones?

A friend mentioned boudin balls....pies could go with that too.
