Pickling Peppers

Harvested my 1st round of peppers this year and gonna do some pickling tonight. I have about 10 cayennes, 8 cerranos, 4 banana peppers and a bag of chopped bell peppers. Going to add some garlic cloves too. I ate a cayenne last night to get a taste of the heat and it was freaking hot. I forget how hot a fully ripened cayenne is. Im pumped.

Now what is your pickling process?

Boil them for about a minute or two to soften up. Stuff the peppers and garlic in mason jar tightly. Mix together white vinegar, mustard seeds, sugar, water, black pepper. I have the exact proprtions listed at home. Once dissolved pour over the peppers leaving just a litte air in the top. Screw on the mason jar lid and put in a pot with some boiling water. Once the lid pops in, its sealed and good to go.

My bad. I forgot to type that.
Finished them last night. My mom had some jalapenos at her house and I threw in some purple onions as well. I have 3 quart sized jars. One with only banana peppers and onions. The other two have garlic cloves, jalapeno peppers, cerrano peppers, cayenne peppers, and bell peppers. Cant wait to tear them up.
