Did it at restaurants. the key is to keep them separate.

is there a way to freeze any fruit and keep its texture? Water expands as it freezes, breaking cell walls.. that's why they get mushy when they defrost.

I love some frozen strawberries though... cut the tops off, line them on a cookie sheet, and you can freeze them just like that. After they're solid you can go ahead and bag 'em.

its what we are talking about. the dry ice freezes them so fast that the crystals never get a chance to puncture all those cell walls. they defrost back to a very good quality instead of that mush that we are used to.

ETA: we used to run down to baskin robbins and get some dry ice from them. i dont know if they stilll sell it, or even if they still use it. but it was always a cheap and easy place to get dry ice should a deal come up with some fresh fruit.

does this work with ground beef? i usually keep a pack in the freezer but because i dont cook with it that often some of it ends up being freezer burned. now i keep it in a frezzer bag but that completely eliminated the problem

we always slice up peaches, strawberries, berries, etc., pour sugar on them and then put in freezer bags.. before freezer bags were invented, we used little tupperware containers..

I buy Louisiana strawberries when they're in season, wash em, cut the stems off and then put them in a salad spinner to remove all the water.. Then, line a large bowl with paper towel and air dry em with a dryer on cool setting, to remove all the water. Then after they're completely dry, I bag em in Ziploc freezer bags.

They don't get mushy if they're frozen dry.. and they don't stick together.. You can defrost as much as you want and use them as you like.
