Aiight, I've always been a charcoal guy, but I recently bought a gas grill

What do I do with this thing?

Anything I need to know to not make crappy food.

Seems like its gonna be good for quick weekday meals and fish, etc.

Yeah trade in your gas grill for a charcoal grill and you'll be good to go.

I love my gas grill, but I've never had charcoal so I don't really know what it's like to cook on one.

Cooking is about the same. A gas grill is ready instantly whereas charcoal takes 20-30 minutes before you can grill.

To me, a charcoal grill adds a flavor that a gas grill doesn't. Just my personal preference though.

I had a charcoal pinstripe in college. Had double vents. Really cool. My other suit was a gas, too! Orange corduroy with huge lapels! But I wasn't wearing my grill back then - some punk knocked two of the diamonds out. The more thinks change the more they stay the sam Yee Haw!!!

gas grills cook just as good as charcoal.

people that say otherwise only try and act like some manly man. Ill out cook you on gas any single day

it depends on the grill- cheaper grills put the burners too close to the grill- more expensive gas grills provide distance , more burners, better control

To grill correctly you need to be able to control heat.

FWIW- charcoal is not heart healthy- but then neither is that T Bone or Rib eye you gonna throw down

Did some T-Bones for me and the kids last night along with some marinated grilled veggies.

It was good, but I'll have to get used to the grill. It needs some seasoning. I erred on the side of caution and pulled the steaks off a little rare, fine for me but the kids like them more medium so I had to put one back on.

While there is no substitute for charcoal flavor, I achieved a good sear and it was quick and easy.
I'm not a ford/chevy guy with gas and charcoal.
I used to cook in restaurants where every grill is a gas grill and you still get good food out of them.

My original question dealt more with technique and recipes. Thanks to all for the responses/

Gas certainly has it's place.. I've had some, with mixed results, convenience definitely is a major factor... For me, electric has been the "go-to" for several years now, with charcoal on "special occasions".

Don't listen to the haters.

I have a big charcoal I have used for years and still do for smoking and large BBQ.

But bought me a small weber gas grill last year and I love it.

Great to just throw something on quick. I threw a few ears of corn on last night to go with supper,

My best advice, season the grate before you start.

Maybe charcoal isn't, but there's nothing wrong with a t-bone or ribeye

And I've always been a charcoal guy myself. My family has always taught me that way. My stepdad puts mesquite chips in with his charcoal as well to add flavor. Gas can cook too, there's no questioning that, but there's a nice smoky flavor with charcoal.

Not to me they don't. I had a gas grill and hated it. Way too much babysitting for my taste. When I put chicken on my charcoal grill with the lid on, I don't have to worry about flareups and can go inside the house for a long time before having to check on the chicken. I can also do long low and slow smokes with little to no tending at all. I've even went to movies and such while things were smoking over charcoal. The Weber Performer is about the best all around grill one can buy.
