Blackened Catfish Recipes

I'm going to blacken catfish filets tonight and I've never done it before. I have a cast iron skillet and catfish. How do I proceed FB?

Little oil....get the skillet hot....i use a ton of black pepper and some Tony's. Bout a minute on each side and done

you can always get that paul prudomme blackened seasoning....i just like to do my own....i add oregano basil and parsley too

If you're doing it inside, do you have a strong exhaust? Blackened puts out a lot of smoke if you're doing it the correct way.

I use butter, not oil.
Liberally brush on melted butter, and liberally season with blackened seasoning.
Place seasoned side down in a very hot skillet. Now do the side up just like you did before. Probably 1 to 2 mins per side depending on how thick the fish is.
The thinner parts of the fish will cook faster, so dont base the 'doneness' of the fish on those.

I started some garlic in olive oil then added butter for the fish. It was pretty smokey but worth it. Came out great.
