Any tips for gator legs?

I received two lb's of gator legs from a buddy of mine, and have no idea what to do with them. I've searched google, but about the only thing I can find out is that it's pretty tough meat. Any ideas? I'm reasonably competent in the kitchen, so all suggestions are welcome.

Haven't heard of that(from Bama), but I just looked up some recipes, and it sounds very good.

Try to trim as much connective tissue as you can. Cook low and slow...I'd consider starting a recipe with a little more liquid than called for and cook it down...that is some pretty tough meat. FWIW, I don't cook with gator anymore...just not a big fan(we used to have a bunch of tags and I've been through a bunch of them,though).

Every recipe I've found calls for 'rotel tomatoes'. Is that an LA thing? I'm in HI, and I don't think I can find those.

One last question; I have a great turtle soup recipe. Would gator leg substitute well?

Yes it would. Very few places serve real turtle soup anymore. It is usually gator or veal.

Ha ha, I've picked up on that searching through recipes. I'm starting to see why my buddy gave them to me.

I've eaten gator many times, but this will be my first time cooking it. I'm developing a bit more respect for people that have cooked it for me.
