I am planning on making a 7 course meal this Friday. This is 6 courses more than I usually make. I need a suggestion for a good soup as part of this meal. Preferably not too large of a quantity because it is dinner for two. Amy suggestions?

Oyster and Artichoke Soup

Butternut Squash Soup

Baked Potato Soup

Shrimp and Corn Soup

French onion soup

Crab onion and brie soup

ENDLESS....

eta... It would probably be easier to just start with what kind of base do you want to work with and go from there.

This could work. I was planning on having crab to put on top of the steak and Brie for the cheese plate. Anyone have any recipe suggestions? In recipe I pick would be a shot in the dark.

You can make a "turtle soup" using ground veal instead of turtle. Very good.

Traditional New Years Eve soup en francais is French Onion soup. Kind of like the black-eyed peas in the south.

I'm making a ham stock and black eyed pea soup with andouille, but I don't think that's what you have in mind.

What are your other courses?

I have a white cheddar soup that's delicious, but if you're having a cheese plate, you might not want to go in that direction. It's a great soup served demitasse or as a starter course.

Lobster bisque is another. I just wing that when I make it. You can make a basic cream soup recipe using lobster stock and adding a bit of brandy.

Roasted red bell pepper soup garnished with some toasted almonds and chopped chives or finely chopped green onions is a good starter.

Corn and crab or crawfish or shrimp or andouille is another good one. I have a recipe in the recipe book above and you can make it with any of those ingredients.

Roasted cauliflower or roast any veggie you like and make a cream bisque out of it.

I'd like to make one similar to the Chimes. Anybody have a good recipe that could get close to mimicking that one?

When winter comes and you catch a cold or flu there is nothing better than chicken noodle soup.

Otherwise, I like clam chowder and French onion.

I try to keep chicken soup in the freezer sans the noodles since I find them mushy after freezing. It's easy to heat up and cook some pasta to add in.

I made pisole or (is it pisoli?)yesterday for the first time. It was easy and very tasty. It will definitely be a repeated soup in this house. Made a pretty big pot and it appears that it would freeze well.
