Cooking question

Cooking a jambalaya for tomorrow night. Last time I cooked jambalya I followed poche's thread. The rice came out perfect, but it was way too salty. Could the chicken broth have had anything to do with it being too salty? Do you usually cook broth to rice 2:1 or do you part the broth with water.
I think the real culprit was I put too much LeBlanc's seasoning. How much would you recommend for 5 cups of rice?

The broth should be okay. You must have seasoned it at somepoint tho, just back off a lil bit with the seasoning and stick with the 2 to 1 ratio.

less LeBlanc's, try sodium free broth

use stock instead of broth, low sodium

I'd do away with the premixed seasoning and add the components (cayenne, garlic powder, black pepper, salt mostly) individually. That way you can monitor the salt level throughout the cooking process.
