Anyone have good recipe for making tasso? Going to try to take advantage of the parents' smoker and leave with some homemade smoked sausage and tasso while I'm there for Easter.

don't really have a concrete recipe but when my dad and i use to make it we just took a pork shoulder and cut it into 1 inch slices (the length of the roast), seasoned the slices (garlic powder, cayenne, salt, black pepper), and then smoked the heck out of it.

What kind of smokehouse did he have? I'm thinking about building one out of brick....

A buddy of mine smokes his with pecan. It is some of the better I've ever had.
