It's actually pretty simple. Ground pork, two different types of red chile powder (spicy and non-spicy), and seasonings. I'll have to look up the recipe, I used to make my own whenever I had chorizo and egg burritos for breakfast.

I used chorizo to make red beans a couple years ago here in CA. It was nice and fresh.

Make sure you have the main ingredients. Pork Salivari Glands and Lymph Nodes.

I bought it, but the only thing I've ever made with it is queso dip or stuffed jalepenos. I was wondering if y'all had any other ways of prepring it.

Stuff it underneath the skin of a chicken.

We always just ate it for breakfast. Ether mixed with scrambled eggs, fried potatoes/onions/garlic, or in refried beans.
Depends on what kind you bought, but most are relatively greasy, so keep that in mind.

quote:el tigre brought it up a few months ago to do a chorizo chili. im lazy, so instead of doing it from scratch. i bought a vegetarian chili mix (with the beans and everything in it) and just dumped the chorizo (grease and all!) into the pot. it was awesome!

i do a black bean and chorizo torta - top it with avocado and queso fresco and serve with fried plantains.
