Texas or Tennessee are the best states for barbecue. If you want the best of what Louisiana has to offer, look for the best boudin and cracklin places.. especially around the Lafayette area.

Big Mike's Smokehouse in Houma is pretty damn good. I don't recall their ribs being the greatest but overall it's solid. Brisket is very good and I usually HATE brisket.

They don't have ribs but the best BBQ place that I have been to is Hog Heaven in Covington. That location is moving right now so if you want to go to the original you have to go to the thriving metropolis of Sun.

The best BBQ in Louisiana is cooked at people's homes. This is just not a state where people go OUT to eat for BBQ. As a result you dont have a ton of BBQ joints. As a whole LA cooks great BBQ that is just as good as any other state. However most of us just cook it at home on the weekends.

I just know I grew up learned from my family and have always heard how great BBQ is in other states and then ventured out to those places and come back routinely disappointed because its just as good what I learned to cook at home.

I actually find Louisiana is a well rounded BBQ state. Many people here cook both the Beef BBQ lines from Texas and the Pork lines from the rest of the south. There is no hard line that people have to follow here. But you wont find any of this in a restaurant. Louisiana is a very social state. BBQ is more reserved for get togethers than a place to eat out. Of course there are still people that have no idea what they are doing but I would guess you will find this in many states.

Podnuh's ribs that I had the other day were awesome as was the bbq chicken that I had recently at TJ Ribs.

I just can't see where the bbq in Texas or any other state would be any better.

note: i need to get off the medication

country tavern in shreveport is pretty good, but shreveport is really texas according to some so that might not count as Louisiana.

Never heard of a difference in this.. Only between grilling and smoking. Im guessing you are referring to this with adding sauce to the grilled food. My preference is smoked BBQ though.. Low and Slow all day long.

Of course some things you want to grill instead of smoke too such as pork steak.

Ribs and true BBQ: THe Joint in the Bywater in NOLA. This place is a step below the best places in Memphis/Texas I have been, but it is funky and very good.

First, one must wrap their heads around the fact that we have a different style of "BBQ"...in fact the two best BBQ sandwiches I have ever had have been in LA (I have been all over NC, SC, TX, TN, the Delta, Alabama and sampled all kinds of BBQ)....

Trust me and get these:

Cochon de Lait Po Boy: Walker's BBQ in NOLA East (same people as Jazzfest).

Pulled Pork Sandwich: Pig Stand in Ville Platte

Not the type of BBQ you are used to, but it is what LA specializes in...for my tastes in a better "BBQ" style pulled pork sandwich than anywhere else.
