"Grilled Mahi and Tuna Kabobs" -OR- "One of the best things to ever come off of my Grill."
Had some Mahi and Tuna left over from a recent fishing trip, serched the net and found some great recipes on the wholepaycheck website. I've seen a couple of posts on here with people looking for recipes and thought that I would share my success.
Grilled Tuna Kabobs with Peach Mango Salsa
Grilled Mahi-Mahi with Arugula
These were definitely some of my best work, even though they were VERY easy to make. I think the fish being so fresh helped, but the recipes are solid. I loved the way the Arugula went with the tomatoes and fish.
The peach mango salsa (got it from whole foods) is amazing by itself. I really don't usually like salsas, but I wanted to drink this stuff. I wanted to brush my teeth with this stuff. I wanted to move to Massachusetts and marry this stuff! It went great on the tuna kabobs. It was perfect with the tuna and bell peppers.
We'll just say that the wife "really appreciated" the dinner. I still had to do dishes though.

i just did some yellowfin kabobs on the green egg Monday night and they were awesome. I dont remember the exact marinade but it had ginger, soy, garlic, sesame oil, etc. Ill try to look it up and post later - defnitely went well with the mushrooms and onion. Looks like i will have to fire up the pit and try out the ones you made this weekend!
