This method works for me every time

First you need a big tall pot that allows the shrimp plenty of room to move around

get your water and whatever seasonings you like to a rolling boil

add shrimp and they will sink keep fire going on high

continue cooking until 1/2 of the shrimp are floating then cut off fire and let soak

continue soaking until most of the shrimp have sunk then strain and enjoy

If your shrimp are too hard to peel then they are overcooked, this method is great because it does not use time as a variable(which would not allow for size diffrences in shrimp) but uses how the shrimp react to cooking as the time variable

Buy the ones that are already peeled. You can get them at Sam's and Wal-Mart, and probably other stores. They only come with the tip of the tail on them. They also have the ones that still have the shell on, but have been de-veined, so they have been split all the way down the back.

You are overcooking them. Put shrimp in a pot of boiling water. Bring back to a boil. Turn fire off. Soak 5-10 minutes and drain.

ETA: You have to cool them down by spreading them out on a table or something. They'll keep cooking if you pile them up after draining.

Add no more than a stick of butter whle they are boling. And dont over boil.

Also a ice bath does not make the shrimp cold, just keeps them from cooking more. The ice melts in no time

This is how to boil shrimp:

add shrimp and water into a large tall pot along with seasoning, salt and lemon and 1 stick of butter (butter is what keeps it from the shell sticking)

Let shrimp soak for in seasoning for 1 hour (add some ice or put in fridge to keep shrimp kind of cool)

After soaking for 1 hour, place pot on heat and cover pot.

Once shrimp come to boil take off heat and strain water out.

Add some handfulls of ice and to cool shrimp so they do not continue to cook! Also add some salt.

Then strain water again because the ice will
melt.

at this point they are ready to eat and they are still hot.

They will come out perfect everytime!!!!

Your recipe sounds great, but this is WRONG. Overcooking makes the shells stick and butter doesn't change that. You are cooking them the right amount of time and cold shocking them, that's why they aren't sticking. Not because of the butter.

I'm a chemist for a dairy farm, butter is the essential ingredient that makes shrimp easy to peel
