Crawfish etouffee / wine

I would suggest a light, crisp white to balance the spice and richness of your etouffee. You may want to look at stainless steel fermented California chard, a New Zealand or Washington sauvignon blanc, or even a riesling or voignier.

i would do a crisp white, and also consider serving a light green salad with a subtle citrus type dressing. That and the wine will work nice with the butter and spice of the etoufee.

How much do you want to spend?

I like a nice Oregon or Washington state pinot gris with spicy food. Chateau Ste. Michelle, from Washington state, makes a nice pinot gris for about $12.00. The 2007 is out and it's very good. It has enough acidity to cut through the richness of the etouffee, but it's not an overly complex wine so the flavors won't clash.


If you want something a little different, you might consider a viognier. Costco has the 2007 Zaca Mesa Viognier for around $13.00 and it's well worth the price.
