Other than just pulling one off the tree and tasting it.
Do you have to wait till after Thanksgiving or after the weather gets cold enough?

I've always found that a few days after the first decent freeze is the best.

yeah, everyone has told me that after the first freeze (or damn near it). Also, they get a little softer feeling. The ones around here (Ascension Parish) came in last week for the most part, still a few stragglers.
