How long will a roux keep?

Is is ok to make a roux several days or a week ahead of time and keep covered in the fridge? Is there any difference in the taste?

yes, it will keep at least a week , probably more. I don't think there will be a difference in taste, unless it's taste could improve a bit.

Keep it in a Mason jar in the fridge. It'll last at least a month...prolly 2-3.

When you go to use it, scoop off the solidified cap and you'll be good to go...
