Which Work Sharp model?

I know several recommended work sharp sharpeners but is the Ken Onion version worth the extra $60? Hesitant only b/c I'm not sure the person getting it would use it that much.

Yes because many of the attachments won't fit the standard model. We bought the standard model first thinking we'd never have a need for the attachments and we regretted it. Purchased the Ken Onion model not long ago and have never looked back.

Worth it. By once, and be done with sharpening tools for good.

Great tool to have. It removes material very quick and you can ruin a knife quick. Just pay attention and keep the blade moving.
