Question for the brain trust. I have a long week this week and won't get home until dinner is ready each night. I caught a few beautiful flounder last weekend and plan on stuffing them this week. Problem is by the time I get home from work its time to eat not cook....

So anyone ever stuff a flounder the morning of then throw it in the oven later in the day? Concerned the bread crumbs and such might get soggy this way but ready to eat a flounder... TIA

Sure have. Just keep it very cold. Crab meat stuffing is best.

It should be fine.

I usually make enough stuffing to freeze so I don't have to make the stuffing every time.

You caught that in the river spillways? They should be stacking up now.

Not in the spillways but off of the river, and yes they are pretty thick right now, gotta love flounder migration!

Do it all the time. I debone all mine so I would have same problem. I even stuffed some then froze them, but that didn't work out as well as I would have liked. But it's nice to be able to call wife, tell her to put in oven and by the time I'm home it's almost ready.

I also do like DSS and make a bunch of stuffing at once and freeze it.

Prep everything.

Clean and debone that flounder.
Make your stuffing but don't add the bread crumbs.
While the oven is pre heating add the bread crumbs to your stuffing then your stuffing to your flounder.
Bake that sum bitch for 25-30 minutes at 375/convection.
