Snow Geese - Do you eat them?
Posted by dpelle1 on 2/5/16 at 10:23 am00
I've been invited to go on a snow goose conservation hunt in Arkansas where none of the normal rules apply. But I heard that snow geese aren't good eating at all. Not anything like the few specklebellys that I've killed near Gueydan in the past.
Do any of you eat them? Taste any good?

frick yes. I am seriously convinced that anyone who doesn't simply cannot cook.
I cooked a gravy with specs and snows a few weekends ago and couldn't differentiate.
Btw. You're going to have a blast. Having thousands of snows locked up is right up there in the "raisemy heartbeat" category

Yes
I like the breast meat tenderized, fried and then drenched in white gravy.

I breast them all out and get sausage and boudin made at end of the season. Delicious.

Strictly breast them out and either use in sausage, gumbo, or like one guy said tenderized and marinated for grilling. Def not as good as a speck, but not inedible

I try to breast a few hundred out every year. Makes some of the best jerky I've found.
