Shot a doe Saturday afternoon, how long will backstrap keep in fridge?

I have stuff going on all week and may not be able to fry some up until Friday. I trimmed off all of the silver skin. What is best way to keep it until then? Covered in ice, covered in water in fridge? Ziplock in fridge? Freeze it? Thanks in advance?

Just throw it in a ziploc and thaw on friday or in the fridge on thursday. I think it would be fine but why risk losing a nice piece of meat.

In fridge in ice and water bath. Good at least 7 days.

I'd keep it dry on rack or foil,, just like aging beef.

Anyone ever had fresh beef? It's pretty gamey.. I'm surprised more deer hunters don't age their deer meat.

I love rare skillet or grilled blackstrap, but chicken fried with eggs, biscuits and gravy (for breakfast) right after a morning hunt is pretty amazing too. I won't turn down either.

I'd put that shite in a bag and freeze it now...you can thaw it when you are ready to cook it...

Probably gonna stuff some and grill it too.

shite I never get around to freezing them. Eat then all up to fast. I age it in the fridge at least 7 days, up to 10-12 days...

awesome, I love it.

aging deer on a roasting rack in the fridge works out well. Keep the drippings drained and don't cover it.
