Back to the original topic, I like the taste of sheephead. Just as good as black drum or redfish in my opinion.

hell yes they are good!
i cut the back from the top first.
then from the bottom, but use an ultra sharp fillet knife.
then i run that knife traditional way that meets those cuts and boom...huge fillets ready.

A friend was cleaning one, and he said they weren't any good. I said I'd eat it right then and there, and sure enough I took a bite out of a fresh sheephead like it was a sushi special at Tsunamis.

Very.
They don't yield well at all though. There isn't much meat on what appears to be a pretty big fish.

One of my favprite fish too eat and catch.
We use fiddler crabs for bait and jig around pilings or structure.
Ive heard they taste like crabs because its their main diet.

Great eating fish but a bitch to clean due to the spines and funny shaped rib cage. It takes a pretty good sized one to make a decent fillet. I have also fried the small ones whole like perch

I find they taste great. I usually only keep them when I'm catching redfish though. If I have an icechest full of stuff that's easy to clean, I'll probably throw the convict back.

I have a friend who smokes them and makes a dip/spread out of em. Eats it in burritos and such. Pretty damn good I must admit.
