I'm looking for any advice on fresh water fishing in the Tensas bayou, Bayou sorrel and Bayou Pigeon areas.
what launches to use and what areas should I fish for best results?
I've been a salt water guy for years and want to learn some fall/winter spots close to home.

Sorrel and Pigeon both have public launches. As far as areas, look at some maps and start hitting canals with grass and "spillway clean" water. Water will have a greenish tint.

Make sure your boat tank is full, bring a gps or map at the least, fish it when the river is on a slow fall, some areas they prefer shiners over jigs and have patience. Good luck.
