Question...For here in South Louisiana is a (wind-rated) roll-up door really necessary or will the non-rated wind ones work just fine?

"work" as in go up and down, of course
"work" as in not blow out in strong winds, who knows
if this is a new building your doors should be rated
if its a retrofit do whatever you feel comfortable with

This. You really aren't looking at that much more money for a much better door.

Non-rated roll-up doors will work fine until a hurricane when the winds get over the rating of the door. Then it won't work so well.

In an area that is prone to the occasional hurricane, I would think wind rated doors would be a good thing.
