There are a couple grease fittings I have shot grease in but has not helped. Anyway to regrease/ lubricate the steering, or am I just going to have to replace? I have a 3 day trip in March so if there is a quick fix that will get me through that I can replace later.

Probably going to have to replace, but this gave me temporary relief on last boat. There may be other helpful vids as well.

oil the shaft at the outboard and turn left and right a bunch. the old grease gunks-up over time and continuing to grease at the zerks on the steering shaft isn't doing much.

This, we used to take the steering cables out and clean out the tubes with drill bit the same size as the steering rod. Most of the time you need to pull motor to do this, which is not a big deal if you have a engine hoist handy....

I worked at a boat repair/manufacturer for a few years while in college... That's how we got steering systems free after sitting for to long without use.
