Ate some tonight.
Put the rest in the freezer.
I ended up with about 12 pounds of filet. I fileted it and cut all the blood line out and silver lining off, then I soaked it in ice water for 1 1/2 days to get rid of the rest of the blood. I Couldn't let my wife see any of that or she wouldn't eat it. It was quite good, no muddy taste at all.
